Quick Thoughts
Unfortunately these Amex Offer aren’t valid for onboard spend, only for initial reservations and any other additional purchases made at that first purchase. However, if you can prepay for onboard credit at the time of booking, that would presumably be eligible.
If you have these Holland America Amex Offers on two or more household cards and you’re booking via phone or through a Holland America Line travel advisor, it might be possible to split payment for your cruise across two or more cards. If so, and if your cruise costs $1,500 or $2,000 or more (depending on which version(s) you’re targeted for), you could spread the payment across two or more cards in order to earn more than one statement credit.

I’ve had the 200/750 offer on 3 cards for the last few days. I’ll have to check for the other offer. I’m wondering if buying excursions will trigger the offer?
Based on the terms, if you can add the excursions during the initial booking process, I’d assume that would work.
I don’t know if excursions will work but I do know that making a payment of $750 (or $1,000) to an already booked HAL cruise will work. It does not have to be a new booking.
I get these HAL AmEx offers every 8-9 months and I have my non-HAL travel agent charge the amount to an existing HAL booking and it always triggers the refund amount. Since I always have 3-4 HAL cruises booked, it’s not hard for me to find one that needs $750 (or $1000).
Be sure not to pay the cruise in full until final payment since if you pay it in full then it might no longer be refundable per HAL’s terms and conditions.
Seems I’m not getting an decent Amex offers these day. I have lots available – they are just for garbage I would never use. Depop, eltamd.com, HyperX, glossier, oribe, clarins, gobble…??? WTH!
How many Amex Offers do you have displayed that are ready to load? Amex only shows you 100 offers at a time, so you’ll need to load a bunch of those in order to see more of them; that might be why you’re not seeing anything good. That said, it might just be that you’re not getting targeted for anything useful either.
I just went through two accounts and added some 200 offers to a card. Sadly the HA offer wasn’t among them. Perhaps because I used one last year.
How to see more than 100 offers? Though 100 is the most available offers.
Amex only displays 100 at a time. To see more offers, you have to load existing offers to your card(s).
Cardpointers helps by adding all the offers available to you. Then I just do a search because 268 or 398 offers (depending on the card) are already added to the cards.
