JetBlue is offering some great fares in Mint class on transcontinental routes (from $399 one-way). There may also be some availability from NY or Boston to the Caribbean in the same lie-flat Mint class from $267 one-way. You can alternatively use points by transferring to JetBlue TrueBlue (JetBlue is a Citi transfer partner, Chase transfer partner, and Amex transfer partner) or to book directly through a credit card portal, which might be an even better deal.

Quick Thoughts
Running with Miles reports fares to the Caribbean from $267, though at the time of writing I’m only finding one date with that price, so that one may already be gone.
However, transcontinental flights between the coast cities are also on sale and pretty widely available, with flights available from $399 each way, which seems like a great deal for what many regard as the best domestic business class. You’ll find the best prices between New York and Seattle at $399, though flights between Boston and San Francisco are also available for just fifty bucks more at $449 on some dates. Availability is generally good for months not named July.
You could of course book these with cash or use JetBlue TrueBlue points, which would start from 29,800 points one-way (which can be transferred from the major transferable currency programs).
Alternatively, you could use even fewer points (26,553) if you have the Chase Sapphire Reserve and book directly through the Chase travel portal.
You might even pay a bit fewer points still if you have access to the Business Platinum’s rebate on flights purchased with points.
If you’re looking to enjoy Mint class, these prices are as good as it typically gets. As these are pretty widely available throughout most of the rest of the year, it should hopefully be relatively easy to put together a trip.

This New York to Seattle fare has been up for a few days. I am really tempted to book it because I need to fly from New York to Seattle on April 21st and the cheapest economy is 169. About half of the Mint Fare.
